NEER DOSE

Neer Dosa is a popular South Indian dish made from rice batter. It is soft, thin, and typically served with coconut chutney or sambar. Here’s a simple recipe to make Neer Dosa at home:

Ingredients:

  • 1 cup raw rice (preferably sona masuri or any other short-grain rice)
  • Water for soaking
  • Water for grinding (approximately 1 to 1.5 cups)
  • Salt to taste
  • Oil or ghee for greasing the dosa

Instructions:

  1. Rinse the rice under running water until the water runs clear. Then, soak the rice in enough water for at least 4 hours. You can also soak it overnight.
  2. After soaking, drain the water from the rice and transfer the rice to a blender. Add about 1 cup of water initially and blend it into a smooth batter. Gradually add more water as needed to achieve a thin, watery consistency. The batter should be runny, similar to buttermilk.
  3. Once you have a smooth batter, add salt to taste and mix it well.
  4. Now, let the batter rest for about 15 to 30 minutes. This helps in fermenting the batter slightly, though Neer Dosa is not a fully fermented dosa like traditional ones.
  5. Heat a non-stick or cast-iron skillet (tava) on medium-high heat. Make sure the tava is well-heated before making the dosa.
  6. Grease the tava with a few drops of oil or ghee. Take a ladleful of the batter and pour it onto the tava from the outer edge towards the center in a circular motion, creating a thin dosa.
  7. You may notice that holes form on the dosa due to its watery consistency. This is normal and adds to the texture of Neer Dosa.
  8. Drizzle a few drops of oil or ghee on top of the dosa and cook it on medium heat until the edges start lifting and the dosa turns a bit golden. Avoid flipping the dosa; it cooks only on one side.
  9. Once the dosa is cooked, fold it or roll it and transfer it to a plate.
  10. Repeat the process with the remaining batter, greasing the tava before making each dosa.
  11. Serve the Neer Dosa hot with coconut chutney or any other side dish of your choice.

Note: Neer Dosa is best enjoyed fresh and hot, as it tends to lose its softness when it cools down.
