KORI ROTTI
Kori Rotti is a popular and traditional Mangalorean dish from the coastal regions of Karnataka, India. It consists of two main components: “Kori,” which means chicken curry, and “Rotti,” which are thin, crispy rice wafers. The unique aspect of Kori Rotti is that the crispy rice wafers are soaked in the flavorful chicken curry before serving, giving them a soft, melt-in-your-mouth texture. Here’s a recipe to make Kori Rotti:
Ingredients for Chicken Curry (Kori):
- 500 grams chicken, cleaned and cut into pieces
- 1 large onion, finely chopped
- 2-3 tomatoes, chopped
- 2-3 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 tablespoon red chili powder (adjust to your spice preference)
- 1 tablespoon coriander powder
- 1/2 teaspoon garam masala
- 1/2 cup thick coconut milk
- 2 tablespoons oil
- Salt to taste
- Fresh coriander leaves for garnish
Ingredients for Rotti:
- Store-bought or homemade Rice Rotti or Rice Wafers (readily available in Mangalorean stores or online)
Instructions:
For Chicken Curry (Kori):
- Heat oil in a pan or a kadai over medium heat. Add chopped onions and sauté until they turn translucent.
- Add the ginger-garlic paste and green chilies. Cook for a couple of minutes until the raw smell disappears.
- Add chopped tomatoes and cook until they become soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and sauté the masala until the oil starts to separate from it.
- Add the chicken pieces to the masala and coat them well with the spices. Cook for a few minutes until the chicken starts to brown.
- Pour in the thick coconut milk and bring the curry to a gentle simmer. Cover the pan and cook the chicken until it is tender and cooked through. If needed, you can add a little water to adjust the consistency of the curry.
- Once the chicken is cooked, sprinkle garam masala over it and give it a final stir. Turn off the heat.
For Assembling Kori Rotti:
- Take the crispy Rice Rotti or Rice Wafers and break them into smaller pieces.
- In a large plate or bowl, place the broken Rotti pieces and pour the hot chicken curry (Kori) over them. Allow the Rotti to soak in the curry for a few minutes. The Rotti will soften and absorb the flavors of the chicken curry.
- Garnish with fresh coriander leaves.
- Serve Kori Rotti hot and enjoy the unique blend of textures and flavors.
