PUNDI
“Pundi” or “Pundi Gatti,” which is a traditional South Indian dish made from rice flour. Pundi is also known as Rice Dumplings and is popular in certain regions of Karnataka and Kerala. It is typically served with coconut chutney, sambar, or a curry of your choice. Here’s a simple recipe to make Rice Pundi:
Ingredients:
- 1 cup rice flour
- 1 cup grated coconut
- 1 and 1/2 cups water
- 1/2 teaspoon cumin seeds
- Salt to taste
Instructions:
- In a saucepan, bring the water to a boil.
- Add the grated coconut, cumin seeds, and salt to the boiling water.
- Reduce the heat to low, and slowly add the rice flour to the boiling water mixture. Stir continuously while adding the flour to avoid lumps.
- Mix the rice flour well with the water and coconut mixture until it forms a smooth, thick dough. It should be of a slightly sticky consistency.
- Turn off the heat and allow the dough to cool down for a few minutes until it is safe to handle.
- Grease your hands with a little oil or water to prevent sticking. Take small portions of the dough and roll them into small lemon-sized balls. You can flatten them slightly, but they are typically kept round.
- Arrange the rice dumplings (pundi) in a steamer basket or a greased idli plate.
- Steam the rice dumplings in a steamer for about 12 to 15 minutes or until they become firm and fully cooked.
- Once they are cooked, remove the pundi from the steamer and allow them to cool slightly before serving.
- Serve the Rice Pundi with coconut chutney, sambar, or any curry of your choice.
Note: The key to making good Pundi is to ensure that the dough has the right consistency. It should be firm enough to hold its shape but not too dry or too sticky.
